The conversion factor
Everything hangs on a single exact fact: one inch is 2.54 centimetres. From there, a foot is twelve inches, so it's 30.48 cm.
Centimetres to feet and inches
Take 175 cm. Divide by 2.54 to get about 68.9 inches. Now split that into feet and inches: 68.9 ÷ 12 is 5 feet with 8.9 inches left over, so 175 cm is roughly 5 ft 9 in. The awkward part is that last step — because a foot is twelve inches, not ten, you can't just read the decimal as inches. That remainder is exactly where hand conversions go wrong.
Feet and inches to centimetres
Going the other way is easier: convert the whole height to inches first, then multiply. 5 ft 9 in is (5 × 12) + 9 = 69 inches, and 69 × 2.54 ≈ 175 cm. Do the total-inches step before multiplying and the arithmetic stays clean.
